Durban Prawn Festival crowns Aqua’s chefs

Sibaya Casino & Entertainment Kingdom’s speciality seafood restaurant, Aqua, walked away from the recent Durban Prawn Festival with top honours when three chefs – Keshan Rambarun, Petrus Madutlela and Siphokazi Ndlovu scooped the 2009 King Prawn title

 

You may have missed the Durban Prawn Festival , but crustacean culinary delights still await you at Sibaya Casino & Entertainment Casino in Umdloti.

 

Aqua’s chefs Keshan Rambarun, Petrus Madutlela and Siphokazi Ndlovu, who wowed the public and judges alike at the Festival with their culinary masterpiece entitled ‘Prawnology’, are on hand to share their talent.

 

Their winning dish featured a prawn bisque topped with carrot and ginger foam.  Accompanying it was a home-made rice puff biscuit, a roulade of smoked prawn, a chilli prawn bite in a rice crumb mixture and a sauce gabriche.  Finishing the dish off nicely were three types of caviar prepared with red and yellow pepper and rice and coriander.

 

Mid-week dining specials are available until the end of November – such as Teppanyaki Tuesdays, half price sushi Wednesdays or grilled prawn combo Thursdays. All three specials are available at Aqua at from 6pm to 10:30pm during the month of November, while half price sushi will be availableevery Wednesday until the end of December. Prices are R80 for the Teppanyaki special and R85 for the Thursday Prawn combos.

The Prawn Festival

The Festival, which is hosted by the South African Chef’s Association (SACA) and Imajin Events, took place from 12 to 13 November and has become an annual event attracting hordes of discerning prawn lovers wishing to partake in the culinary delights on offer.  Over 1 000kg of tiger prawns and 750kg of rice were used to create a variety of mouth watering prawn and savoury dishes over the two days.

 

A large component of the festival is the search for “King Prawn”, and this year’s competition saw 20 of Durban’s leading hotel and restaurant chefs showcasing their signature prawn dishes in a fierce competition to walk away with the title, which is decided through public critique along with professional judging by a panel of six accredited senior SACA chefs.
